For anyone who is starting out with learning fondant decorating skills, these moulds are a great time saver and will go a long way in creating intricate designs in a short span of time. However, they aren’t completely fool proof, and it can take a bit of learning to get it right.When first starting out with fondant moulds, it’s important to find the right materials. While some moulds are quite easy to use and only require the fondant to be pressed in and popped out, other moulds take a bit of time to work with. If you’ve experienced some difficulty and failure while working with fondant moulds, read on to find out the best tips and tricks to help you master the art of using silicone moulds.First, dust your mould with cornstarch and tap out the excess starch. Adding starch will ensure the surface isguillotine knives protected from fondant getting stuck to the mould.Roll the fondant into a sausage shape and begin to ease it into the mould. Ensure the fingers of both hands are dusted with cornstarch, so as to ensure the fondant doesn’t stick to the mould.With the fingers of your left hand, press the fondant into the mould and continue to pinch and smooth the fondant into the mould with the fingers of your right hand, starting from the left to the right.Once the mould is filled with fondant, use a cornstarch-dusted rolling pin and roll over the mould shape, by pressing it firmly into the mould. Dusting the rolling pin will prevent the fondant from sticking and lifting out of the mould.Use a dry, sharp knife and dust it with cornstarch.
Lay the blade of the surface of the mould, and proceed to carefully cut out the excess fondant with a gentle sawing motion. For larger moulds, it is helpful to stop halfway through the sawing to dry and dust the blade again.After cutting off the excess fondant, you may find there are some rough edges. Dust your fingers with cornstarch again and rub the edges to smooth them out.Bend the mould back and allow the fondant to fall out. You might need to ease it out first with the blade of a knife. If the fondant does not turn out, leave it to sit in the mould for a few more minutes and try once again.For smaller, intricate moulds, the designs are too intricate to be Rotary Slitter Knife used in the same manner above. With just one additional step, the fondant will come out easily without and distortion or breakage. Follow the steps below:Dust the mould with cornstarch and press it into the fondant. Slice off the extra fondant as explained above, and smooth out the edges with your finger.If you find that any of your designs have tiny holes in them, fear not! These holes can be filled in with a little bit of extra fondant. After filling them, cut away the excess fondant once more.Keep the mould in the freezer for around 10-15 minutes, or until the fondant has frozen completely.Work quickly and bend the mould to ease out the designs. Some designs will need a bit of effort to release them from the cavities. In case the designs begin to twist or become misshapen while removing them, place the mould in the freezer for another 5 minutes and try again.The frozen designs will be moist and sticky while they thaw, so avoid touching them. Depending on what type of fondant has been used, they should dry within 10 minutes.
